Crispy Pizza Quesadillas: favorite party food

What do you do when you go to make quesadillas, but realize you don’t have cheddar cheese, Monterey jack cheese, or any cheese that’s even a little bit normal for quesadillas (or you just want something different from the usual quesadillas?)

Grab some mozzarella. And pepperoni…and some fixings for making pizza, because you can come away with quite possibly the best edible mashup ever.

When I first thought of this genius combination of pizza + quesadilla, I thought I was a culinary rock star for inventing pizza quesadillas. I later realized I was, in fact, not the first creator of the pizzadilla. Nonetheless, I’ll still gladly accept compliments when serving these up for game day, casual gatherings, or Friday night with the family.

I mean, nobody gets upset over the stunning combination of all your favorite pizza toppings held together by crispy tortillas.

Build Your Own Pizza Quesadilla Party

Lay out all the favorite fixings, several types of tortillas, and have a couple of nonstick pans ready to go.

Then let ’em at it. Everyone builds their pizzadilla just the way they like:

  • Cheese: shredded mozzarella and plenty of it
  • Pepperoni: mini ones, thin cuts, turkey pepperoni, whatever kind you like
  • Thinly sliced mushrooms
  • Thinly sliced bell peppers
  • Thinly sliced tomatoes
  • Sliced olives
  • Sliced red onions
  • Pizza sauce (or pasta sauce)
  • Alfredo sauce or white sauce
  • Cooked, chopped chicken

Anything goes; even baby spinach leaves for white sauce pizzas, if you like. The beauty of build-your-own pizza parties is that there’s something for everyone.

Because it’s a pizza-quesadilla, real guacamole is absolutely encouraged.

Flour or Corn Tortillas

Both flour and corn tortillas work equally well; it’s completely dependent on what you and your eaters prefer. It’s recommended to have a few options available.

Corn tortillas will likely fry up a bit thicker and heartier, though they’re often smaller in size than flour tortillas. Flour tortillas tend to fry up thinner and crispy. Either way, you can’t go wrong.

Feel free to use larger fajita sized tortillas, or smaller taco sized ones.

Pizza quesadilla Party Tips:

  • Do remind all the pizzadilla builders to leave a margin at the edges; otherwise, some of the good stuff will seep out onto the pan instead of onto their plates.
  • Have all the fixings available to use in separate containers, preferably containers with lids. That way, when the party is over, you can easily pack leftovers away.
  • It’s best to have at least 2 pans going on the stovetop; a cooking buddy is ideal.
  • Nonstick pans make for easy cooking and cleanup in this scenario.
  • Be sure oil is sizzling hot prior to putting down each quesadilla; this ensures each one cooks up crisp and browned, without being too greasy.
  • Have plenty of finger foods and snacks on the side:Gluten Free Ranch Snack Mix and 7-Layer Mexican Dip are absolute favorites.
