How to Cook Fresh Ham (2024)

Fresh ham is nothing like the pre-cooked baked holiday ham you might have grown up with. Its flavor and texture are more like pork loin, but with skin that cooks up as crisp as pork belly. Planning ahead is key: Order it from your butcher a couple weeks before you plan to cook it, and ask for the shank (lower) half of the ham. Scoring the skin is essential to helping the seasonings flavor the flesh. (Our general rule is to season with 1 tsp. kosher salt per pound of meat). Because of its size, fresh ham needs to cure 4 days for the fullest flavor--plenty of time to put together the rest of your menu.
