Gluten Free Banana Waffles Recipe

These gluten free banana waffles are wonderfully simple to make and taste like a banana bread, but without having to patiently wait for a banana bread to bake.

And, best of all there are only 3 ingredients. (Which you probably already have in your kitchen right now!)

After having an overflowing bounty of over ripe bananas lately, and making mygluten free banana bread recipeevery other day for a week, I decided to come up with another way to make use of the sweet bananas with just a couple of other simple ingredients.

The best part is that you can meal prep the crispy coconut flour waffles ahead of time, storing them in a sealed container to enjoy a delicious waffle or two on busy mornings.

How To Make Coconut Flour Waffles

The best waffles recipecouldn’t be easier to actually make – the wet ingredients and dry ingredients are combined together in one large bowl before being cooked to perfection.

Simply mash the bananas, whisk in the eggs until smooth and then add the coconut flour (find it here on Amazon) and whisk until you have a thickened waffle batter.

If you’d prefer to make waffles with almond flour, then swap the 1/4 cup coconut flour for 1 cup of almond flour.

I used 2 smallish overripe bananas, if yours are bigger you may only need one and a half. Just start with less banana and you can always add more if you need it.(Here are more ideas for what to do with ripe bananas.)

You can thin the batter with a little almond milk, coconut milk, oat milk, whole milk, skim milk, heavy cream or a dairy free alternative. You could also make indulgent chocolate chip waffles with the great addition of your chocolate chips of choice into the gluten free waffle recipe.

You can also flavor the easy banana waffles batter with a pinch of sea salt, vanilla extract or your sweetness of choice such as stevia, coconut sugar or brown sugar, although I’m quite happy without any added sugar, with the bananas providing plenty of natural sweetness.

While you’re prepping your batter, get out your waffle maker, (here are waffle makers on Amazon) ensure it’s well greased with a little coconut oil, avocado oil, cooking spray or melted butterand then get it preheating to cook yourhealthy recipe.

Once your batter is ready and the waffle maker has preheated, pour the coconut flour waffle recipe mixture into the waffle maker and cook until each fluffy waffle isgolden brown anddone to your liking, the cooking time with depend on your personal preference and power of your waffle maker.

The fluffy wafflesmay need to be flipped, it just depends on the type of waffle maker you have.

I like to use an egg lifter, as my tool of choice, to carefully remove the healthy waffles without burning myself.

We love our waffles as a healthy breakfast or sweet treattopped with chopped banana, fresh fruit such as fresh berries, whippedheavycream, cream cheese,, mascarpone, chia seeds, drizzle of maple syrup or homemade chia seed jam.

FAQs

Why are my waffles not fluffy? ›

Making pancake and waffle batter ahead of time is a huge no-no and will lead to flat, dense results every time. Even letting your batter hang out for just a few minutes after you've mixed it before you start ladling it onto the griddle will lead to less fluffy results.

How do you keep gluten free waffles from sticking? ›

Why are my gluten free waffles sticking? The most common reason I have found for sticking waffles is that you haven't used enough non-stick cooking spray. Make sure to always generously spray your waffle iron with your preferred cooking spray.

Which flour is best for waffles? ›

Let me walk you through what you will need so you can say goodbye to flavorless, floppy waffles and hello to waffles that are light and crispy on the outside and tender in the middle. All-purpose flour is my go-to flour for this recipe. It keeps the waffles light on their feet.

What are the fluffy waffles called? ›

Let's get something straight: Belgian waffles are not just any regular old waffle. They're thicker, fluffier and have a nice crisp exterior.

Is it better to make waffles with butter or oil? ›

Butter has a relatively high water content, and vegetable oil or rapeseed oil actually give your waffles a better crisp crust due to their lower water contents, allowing the batter to brown more easily and evenly. Additionally, butter is more prone to burning, since it has a lower smoke point and contains milk solids.

Should you let waffle batter rest? ›

Recommended overnight or 2 hr resting – for the tastiest waffles, rest the batter overnight in the fridge or for at least 2 hours. This makes the flour grains absorb the liquid so it makes the inside of the waffles softer.

Why add egg to waffle mix? ›

A couple of large brown eggs will also help your waffles have the perfect fluffy interior. Add in a teaspoon of vanilla extract, too, for flavoring. Now you can add in the extra fat that your waffles are craving.

Why are my gluten-free waffles gummy? ›

Wrong hydration: In other words, too much or too little water relative to the flour mixture. If you're swapping for a flour that we didn't test with, go back to Bob's Red Mill gluten-free flours (not their flour mixtures), which are the only ones readily available in U.S. supermarkets, and test again.

Do you spray Pam on a waffle maker? ›

If your waffle iron or pan has a nonstick surface, you should not use cooking spray. Cooking spray builds up on nonstick surfaces and eventually becomes tacky–rendering the non-stick coating useless. Brush oil lightly over the surface of your pan instead: if the spray build-up hasn't ruined the pan, this should work.

What are gluten-free waffles made of? ›

Ingredients:
  • 1 ½ cups oat flour (gluten-free oats pulsed into flour)
  • 2 teaspoons baking powder.
  • ½ teaspoon ground cinnamon.
  • ½ teaspoon salt.
  • ¾ cup unsweetened almond milk.
  • 5 tablespoons melted butter.
  • 2 tablespoons maple syrup.
  • 2 large eggs, whisked.

Can you over mix waffle batter? ›

Some lumps are fine and will cook out. If your recipe calls for whipped egg whites, carefully fold them into the batter in three or four batches. Don't overmix. Overmixing your waffle batter can leave you with tough, chewy or hard waffles instead of crisp waffles with tender insides.

Why are my waffles fluffy? ›

The air trapped inside the whites is what gives this waffle its fluffy texture. It's totally OK if you can still see traces of beaten egg white left in the batter.

Should waffle batter be thicker than pancake batter? ›

Consistency: Waffle batter is thicker than pancake batter. This thick consistency lets you pour the waffle batter into a waffle maker without running out the sides. Pancake batter is looser, which means it is easily pourable into a round shape.

Why are my waffles so dense? ›

Not waiting until the iron heats up properly means your waffles will cook, but never achieve that satisfyingly crisp exterior. Overworking the batter will leave your waffles dense and chewy instead of light and airy.

How do you fix dense waffle batter? ›

By stretching the dough, you give it enough space to expand inside the waffle iron. By doing this, you end up with a lighter less dense and doughy waffle. The inside texture/density of the waffle should be somewhat similar to challah bread. Give it a try.

Why are my waffles soft and not crispy? ›

Cooking waffles releases the liquid in the batter as steam, which is good news for you. If any steam is stuck in your waffle, you'll notice that they are coming out moister than you'd like, and they'll get soggy quickly. To help your waffles avoid this fate, you'll need to take measures to help steam escape.
