I love using it in my hot chocolate too! It’s so easy to make at home and it has even more flavor than the store-bought version!
I’ve been in Dublin and Killarney, Irelandthis past week and it was a great time! We spent a lot of time in pubs drinking Irish whiskey, befriending the locals and taking in the breathtaking scenery!
The only thing that would have made it better would have been a splash of this Homemade Irish Cream in my morning coffee!

The alcohol in the Irish cream acts as a preservative, so homemade versions should be kept in the refrigerator and can stay good for up to 2 months. But also check your batch just to be sure before using 🙂

Baileys Irish Cream is an Irish cream liqueur made of cream, cocoa and Irish whiskey emulsified together with vegetable oil. Baileys is made by Diageo at Nangor Road, in Dublin, Ireland and in Mallusk, Northern Ireland.
Baileys can be easily mixed with all manner of beverages to make a simple, creamy drink. The only rule is to avoid citrus or anything with a lot of citric acid, which makes it curdle. That means avoid juices and soda.
Now, you'll notice that this homemade drink contains dairy. This means that once you've made it, proper storage is key or you won't get to keep enjoying the drink for long. As a general rule of thumb, you can store your freshly made Irish cream for up to two months in the refrigerator.
Good old Irish cream comes together with an easy-to-love blend of whiskey, cream, a sweetener, and flavorings like chocolate syrup and instant coffee powder. Sure, it's not top-level mixology, but it doesn't need to be — it's hard to deny the allure of a stiff, sweet, and creamy drink.
Does Bailey's Irish Cream go bad or expire? Generally as long as you don't subject it to temperature extremes it will last well beyond the official 2 year "best taste before" date. Over time the taste will change and the liquid tends to go a bit darker but only really noticeable if you do a side by side comparison.
Bailey's Irish Cream is bottled in the US at 17% ABV, if we assume that a beer is 5% ABV, that means that the Bailey's contains 3.4 times the alcohol as beer. If your beer is 16 oz by volume it would contain 0.8oz of pure ethanol. A 1.5 oz shot of Bailey's would contain 0.255oz of pure ethanol.
The key thing to remember when experimenting with Molly's Irish Cream drinks recipes is that cream liquors do not mix well with citrus based ingredients.
Whether or not it has been opened, a bottle of Baileys lasts for two years. It's best to keep the bottle of Baileys away from direct sunlight, per The Rusty Spoon, because temperatures over 77 degrees F can change its consistency. Even though Baileys doesn't need to be refrigerated, it will eventually go bad.
Cream liqueurs curdle because of their high dairy content. Dairy products (such as milk or cream) curdle in the presence of an acidic liquid. Acids have a very low pH, which lowers the overall pH of the mixture. As the pH drops below 5.5, the casein proteins in the dairy ingredients begin to curdle.
Avoid curdling – I did some research as to ensure a life free of curdling and it's all about adding the alcohol slowly and being sure to use heavy cream. Alcohol is an acid so making irish cream with, say, whole milk will definitely break the milk, which could result in some serious coagulation.
The real Baileys is manufactured with no egg tracing. It is optional to use eggs in this recipe; however, some websites that offer a homemade version of Baileys have included eggs as an ingredient. If you're concerned about adding eggs, simply don't.
How should I store cream liqueurs? It is recommended that cream liqueurs be stored in a cool place, but refrigeration is not necessary. Manufacturers of cream liqueurs point to the effective preservative qualities of alcohol as the reason that refrigeration is not required.

It has a creamy flavor that mixes well with the spice of Irish whiskey, so every sip gives you a comfy sensation, followed by a spice that warms the body. This makes it a great drink for the holidays, especially during the colder winter months.
Baileys and Kahlua both complement a freshly brewed cup of coffee, but there are distinct differences between the two liqueurs. Baileys is creamy and derives its taste from cream, cocoa, and Irish Whiskey.Kahlua is dark without the creaminess of Baileys and is made with 100 percent arabica coffee, rum, and sugar.
Baileys™ has a best before date on the left hand side of the back label (two years from date of manufacture). Other manufacturers, such as Carolan's™ may have different recommendations. They suggest a shelf-life of six months after opening, and recommend storage in the refrigerator once the product is opened.
After you have cracked open your bottle of Baileys, do you need to find a spot for it in your already overcrowded refrigerator? No, per Baileys. The liquor maker states that a bottle of Baileys needs to be kept in a place that can range in temperature from 32 degrees F to 77 degrees F.
